Liquid N2 Ice Cream

Molecular gastronomy is obviously an interesting take on cooking, particularly from a scientist’s point of view (and the test kitchen in Seattle), and of great interest to me with my cooking background.  I am an avid Iron Chef fan & also like Top Chef, both to get inspiration and techniques.  Donelson wanted to try a black salt & caramel liquid nitrogen ice cream…  Everything was going smoothly until the spigot on the cooler we were using froze open, making it impossible to stop the liquid nitrogen from flowing out.  We did get it unstuck & the ice cream was great!
